I first decided to become a vegetarian back in the 8th grade. It was 1993 and I was attending a Paul McCartney concert with mom in Winnipeg, Canada. A video about animal rights played on the big screens before the concert, and various pieces of literature relating to vegetarianism and animal rights had been handed to us on our way in. After seeing all that, it made total sense to me that people shouldn't eat meat, and as such, I officially went vegetarian that night. After reading Animal Liberation in the 11th grade, I realized that going vegan was the next logical step – not only for the animals, but also for my health, the environment, and the world at large. I've been vegan ever since!

I found this cake tastes better if left to settle in the fridge for a day. I also think oranges could be used in place of mandarins, if you're anything like me and like a less tangy taste. I made my cake in a round cake tin, but I think a square one would be better for serving in small cubes with a cup of anti-oxidant tea. Wrapping cubes in grease proof paper is ideal for lunchboxes too ~ Chris.
¼ cup freshly squeezed orange juice
½ cup white wine vinegar
1 Tbs honey
400g tin lentils, well rinsed
1 cinnamon stick
2 star anise
1 tsp minced garlic
1 bunch baby purple carrots, well washed & cut into 3cm diagonal lengths
1 bunch orange baby carrots, well washed & cut into 3cm diagonal lengths
1 Tbs coriander seeds, roughly crushed
¼ tsp salt (optional)
¼ tsp cracked pepper
2 tsp hazelnuts, chopped
¼ cup fresh coriander, chopped
50g lettuce mix
Preheat oven to 230°C
Combine orange juice, vinegar, honey, cinnamon stick, star anise and garlic in a small saucepan and simmer for 30 minutes until reduced by about a third.
Spray a non stick baking pan and add carrots, coriander seeds, salt & pepper and spray liberally with oil.
Bake for 15 minutes and add reduced syrup and continue to cook for another 10 minutes. Cool slightly, add lentils and allow to cool.
Serve on a bed lettuce mix, scatter with hazelnuts, fresh coriander and serve.
